Organic Foods on a Budget and a Recipe!

If I were to say that you could eat organic foods, and not spend a fortune, would you believe me? I know, I wouldn’t either… but you should!

moms001Have you been shopping at your local Walmart stores lately, and seen this new label of products on the shelves? It’s been starting off slow, but Wild Oats Marketplace is bringing super affordable natural and organic foods to shoppers everywhere!

I had the chance to get an early look (and taste) of several of the Wild Oats products when I was at Walmart’s Home Office in June, and I was impressed! We had a neat presentation from some of the folks from Wild Oats that were there to tell us all about their products, when to expect them, and oh yeah.. They were there for us to ask all kinds of questions! Muahahahaha

They knew that the Walmart Moms were big advocates of Natural and Organic products, so they came ready!

After our trip, we were challenged to come up with a recipe to share, using some of the Wild Oats products, and I knew exactly what I was going to make! It was Enchilada night, so I had to make some refried black beans to go along with it!

 

IMG_1835My refried black beans are pretty easy to make, and by using the Wild Oats Organic canned black beans, I save a lot of time too!

Here’s what you’ll need:

2 Cans Wild Oats Organic Black Beans

Wild Oats Organic Chipotle or Jalapeño Hot Sauce

Wild Oats Organic Olive Oil

1 Can fire roasted chopped green chiles

1 Small red onion

1 Green bell pepper

3 Cloves garlic, minced

Salt & Pepper and other seasonings to taste

Here’s how you make it:

In a large pot, pour in the 2 cans of black beans.

Chop up onion, bell pepper and garlic and put in pot.

IMG_1836Add some Wild Oats Organic Hot Sauce, any seasonings you’d like to add, and cook on medium heat until it starts boiling and veggies soften a bit. Transfer to a frying pan.

Add in 2 Tbsp of Wild Oats Organic olive oil, and start to mash the beans with a potato masher.

Once most of the liquid has cooked off, and they are your desired consistency, your beans are ready to serve!

We love to make this on taco nights, or enchilada nights, or even sometimes when we’re just having chicken! You can substitute Wild Oats Organic Pinto Beans for the Black Beans, cooking the same way if you’d like a different flavor!
